Crispy Feta Fried eggs with Nduja (or pesto)

 

Crispy fetta eggs with a spicy little twist 🌶️


INGREDIENTS - Serves 1

  • 1 egg 

  • 70 grams crumbled fetta 

  • 1 teaspoon of nduja (or pesto)

  • Half an avocado sliced 

  • Wedge of lemon 

  • 1 flour tortilla or slice of toasted sourdough 

METHOD

Gently fry the ndjua in a frying pan for 2 minutes then add the crumbled fetta in a circle, leaving a space in the middle for the egg to go. NOTE: If using pesto instead, add the pesto after you crumble the fetta then follow the same process. 

As soon as you add the fetta, crack an egg into the centre of the frying pan. Place a lid on and fry on medium heat for around 2 minutes until the egg is cooked and the fetta is crispy. To make sure that fetta gets nice and crispy, remove the lid to let any extra moisture evaporate. 

When crispy and cooked, use a spatula to gently slide the egg onto a wrap or piece of toasted sourdough. 

Add some avocado, lemon juice and fresh herbs or chilli. 

Burst the egg yolk open and devour! This spicy little number will be your go-to from now on!
