Shiitake Mushroom Healing Soup

 

This nourishing little number was created for a hangover haha! It’s so quick to whip up and hits all the right spots. Get you feeling tip top!


INGREDIENTS

  • 1 litre of chicken bone broth (or chicken stock) 

  • 200grams of Shiitake mushrooms sliced 

  • 2 cloves of garlic finely chopped

  • 2cm of ginger finely chopped 

  • 2 tbsp of miso

  • 2 tbsp butter

  • 180grams ramen noodles (swap for soba or udon if you prefer)

  • Sliced spring onion to garnish 

  • Jammy eggs to garnish (boil for 7 minutes for the perfect jamminess)

METHOD

Sautee the mushrooms in butter on high heat for around 5 minutes and they get some colour. 

Add miso and gently stir. Then add the garlic and ginger and stir on medium heat for another minute. Now add your bone broth (or stock) and leave to come to a boil. 

When boiling, add your noodles and simmer until cooked. 

Now serve up this yummy dish! Springle some sliced spring onions on top, add a few jammy eggs and devour!
